Sweet Khichdi


Sweet Khichdi..U ppl know khichdi as a popular breakfast..But in my native, especially among Muslims, this traditional sweet pudding is known as khichdi..U can find several recipes for the keyword 'Sweet Khichdi', but this one is entirely different from those..We make it during Ramadan and on special occasions..The best part is it is very healthy, and it tastes soo creamy and yummmmm!! I m so happy to share it here..


RECIPE:

Preparation Time: 15 mins
Cooking Time: 30 mins
Serves: 1 plate(2-3 persons)

INGREDIENTS: [1 cup=240 ml]  
------------------------------------------
Moong Dal - 3/4 cup
Raw rice - 1/4 cup
Shredded coconut - 1.5 cup
Sugar - 1 cup or a little less
Cardamom - 3
Ghee(optional) - 1 tsp


METHOD:

1. In a blender, grind the coconut with required water, squeeze and strain the coconut milk. Repeat this for 2 more times. You will get 1 1/3 cup 1st milk, 3/4 to 1 cup 2nd milk, and 1 cup 3rd milk. Keep the 1st milk separately, and 2nd+3rd milk separately aside.


2. In a kadai, cook the cleaned raw rice + moong dal mix in 2nd+3rd milk in low flame, till the liquid is almost completely evaporated and the mix is cooked by 60%.


3. Now add the 1st milk and cook the mix completely. 


4. Add sugar at this stage and stir until is dissolved. Next add crushed cardamom too. 


5. Finally add ghee if required and switch off the stove when the khichdi is a little bit watery and leave it undisturbed. 


6. After 10 mins, you can clearly see the khichdi becomes thicker, and reaching a perfect pudding consistency. Transfer to a plate and allow to cool. That's it!! 


Your finger licking yummm sweet khichdi is ready to be served!!Njjoy!!


NOTE:
--------------
1. Keep the flame in low to medium throughout the process, and make sure not to burn the mix at any stage.
2. Serve the pudding only at room temperature or chilled. You can't feel its real taste when hot or warm.
3. You can even add a pinch of salt while cooking, just like we do for other sweets.
