Varutharacha Mutton Curry


Mutton Curry with freshly dry roasted and ground (varutharacha) coconut masala..A good one when u want to try something traditional..The coconut when dryroasted with the spices gives an excellent flavour and aroma. Goes well with Indian breads..

RECIPE:

Preparation Time: 15 mins
Cooking Time: 45 mins(20 mins if in cooker)
Serves: 2 - 3 persons

INGREDIENTS:      
----------------------------------------------------------
Mutton - 1/2 kg
Shallots - 10 or more
Tomato - 2 small(or 1 big)
Green chilli(optional) - 1
Ginger garlic paste - 2 tsp
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Coriander powder - 2 tsp
Cumin powder - 1/2 tsp
Salt - as req.
Water - as req.
Curry leaves - 1 sprig 
Gingelly oil/Coconut oil - as req.

To Dry roast and Grind:
Grated Coconut - 4 tbsp
Cardamom - 3(crushed)
Cloves - 3
Cinnamon stick - 3 small
Whole pepper - 20 or as req.
Saunf seeds - 1 tsp


METHOD:

1. In a kadai, pour oil(I used gingelly oil), add curry leaves, shallots and saute for a minute. Next add the ginger garlic paste, green chilli(only if you want, I didn't use it), tomato, and saute well in between.


2. Now add the mutton, a cup of water, and boil in high flame for 5 mins. Next add salt and cook for 10 mins. Next add the masala powders one by one and close the lid. Cook the mutton in medium flame.


3. Dry roast the mentioned ingredients in another pan, and grind them in a blender with little water to a smooth paste. 


4. When the mutton is 80% cooked, add the ground paste, adjust salt and little more water if required. Cook the mutton well and switch off the stove when you reach the desired consistency. DONE!!


Your yummy varutharacha mutton curry is ready to be served with hot rice/tiffins.


NOTE:
-------------------
1. You can pressure cook too, in that case, pressure cook till the 2nd step for 5 to 6 whistles. Then open the lid, and repeat the remaining steps.
2. You can use the same recipe for chicken/egg/beef.
3. Gingelly oil/coconut oil and shallots are highly recommended to bring out the traditional taste.
4. Adjust ingredients as per your taste.
