Fruit Kesari


Rava Kesari made exclusively with fruits!! No sugar/jaggery/palm sugar or any form of sweetener was added! The trick is, right fruits were chosen in right quantity and believe me, u couldn't find out that sugar is omitted.. Even after 2 days of refrigeration, the taste was amazing..I would call this rcp as one of my best experiments..

RECIPE:

Preparation Time: 5 mins
Cooking Time: 20 mins
Serves: 20-30 pieces(approx.)

INGREDIENTS: [1 cup=240 ml]  
------------------------------------------
Sooji - 1 cup
Guava(peeled and chopped) - 1/2 cup
Dates - 30 or more
Red Banana(செவ்வாழைப்பழம்) - 2
Cashews, Raisins - 15 to 20
Cardamom(crushed) - 2
Ghee - 4 tbsp
Water - 3 cups


METHOD:

1. Boil water in a vessel, add the deseeded dates, close with a lid and cook for 5-7 mins, and switch off the stove(I missed the boiling photo). Strain the dates pulp, you will get 2 cups of dates water. Set aside.


2. In a pan, pour 1 tbsp ghee, add cashews and raisins and roast them. Remove and set aside. Roast the sooji in the same pan, remove and set aside.


3. In the same pan, pour the dates water, add chopped guava and cook for 3-5 mins. Then add the red banana, and cook for 3-4 mins.


4. Add sooji little by little and add the remaining ghee at regular intervals. Add crushed cardamom and stir well.


5. Finally when the mix leaves the sides of the pan, add roasted cashews and raisins, and switch off the stove. Transfer to a greased plate and cut into pieces when warm.


The sweetness of dates and red banana is more than enough, the guava's slight sourness balances the taste and hence it tastes soo good!! Your yummy fruit kesari is ready to be served!!


NOTE:
--------------
1. You can use milk instead of water to get a rich creamy taste.
2. Remove the seeds of guava and use, to avoid biting them while tasting, if you wish. Or else, you can add them too.
