When u r craving for some easy-to-make sweet, but healthy as well, this one is perfect. Coconut, when added to burfi, or any sweets is my favourite. The crunchiness of coconut is what makes me love it. And it was too good, n got over within minutes..
I tried this rcp when I made a plating for a cooking competition. The topic for the contest was, 'kids breakfast'. Along with tiffins, curries, and drink, I made this ladoo as a sweet to be served after the main course.

INGREDIENTS: [1 cup=240 ml]

Shredded/grated coconut - 1 cup
Jaggery/palm sugar - 1/2 cup
Cardamom(crushed) - 2
Water - a few spoons
METHOD:

2. Simultaneously, in another vessel, add the jaggery and water, and cook till the jaggery is dissolved.
3. Strain the jaggery to remove impurities. Add this to the coconut and keep on stirring till the moisture is completely removed. It may take under 5 mins.

4. Add the cardamom and stir for a min and switch off the stove.
5. Grease your hands and form laddoos when the mixture is slightly warm.

1. You can store this in an airtight container after it comes to room temperature, for a maximum of 1 week.
2. You can add roasted dryfruits if desired, after switching off the stove.
