If you hav some overripen nendran bananas and wondering what to do with it, then this is a must try rcp..Best served as an evening tea snack in Kerala..The taste is more like a sweetened banana omelette..Really yummy!
Even though we are in the border of Kerala, not all Kerala recipes were common here in our native..Malabar Kaipola is one among those..But this is a popular recipe in the internet world..So in eager of tasting the dish, I made it one fine day as a midmorning snack with some leftover and overripen nendran bananas, and the taste was so good.
Usually when I am trying a recipe for the first tym, I always make it in small amount to test the taste..Likewise I did the same for this recipe, but it got over within minutes :) :) and we didnt get a feeling of fulfilled.. But I decided to make it often n so no worries :) :)
RECIPE:

Preparation Time: 5 mins
Cooking Time: 20 mins
Serves: 1 pola(4 pieces)

INGREDIENTS:
----------------------------------
Ripen/overripen banana - 2 to 3(as per their size)
Egg - 4
Sugar - 4 tbsp
Cardamom(crushed) - 4
Ghee - 2 tbsp
Cashews, raisins - 10 to 15
METHOD:
----------------
1. In a nonstick pan, heat some ghee, add cashews and raisins and fry them. Remove and set aside.
2. In the same pan, add fine chopped banana and saute for a while. You can even allow the banana to become brown. But I like this way. Remove the pan from heat and allow to cool.
3. In a bowl, mix eggs, sugar, cardamom and beat them very well. Add this mixture to the pan, mix them well, and top with cashews and raisins.
4. Now place this pan in stove and close the lid and cook in very low flame for 15 to 20 mins.
Carefully remove the pola into a plate, cut into pieces and serve!!
NOTE:

1. You can even bake the pola in an oven.
