Chicken Fry


An easy deep fried version of chicken..Crispy outside, very soft n juicy inside..This is the way I prepare it often on Sundays, and I would call it as the best version of home style chicken fry..

Usually chicken fry is a little bit hard to chew, than the ones in curries, be it from restaurants or homemade. Even a couple of years back, mine too was like that. But, I learnt to make very soft to chew chicken fry, just like fish fry(yes, like fish fry!!), from my own personal experience. See notes for the trick.


RECIPE:

Preparation Time: 2 mins
Marination Time: atleast 30 mins
Cooking Time: 2-3 mins per batch
Serves: 4 persons

INGREDIENTS:            
----------------------------------------------
Chicken - 12 pieces
Lemon juice - for sprinkling
Curry leaves - a handful
Coconut Oil - for deep frying

To Marinate:
Kashmiri Red Chilli Powder - 2 tbsp
Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tsp
Saunf Powder - 1 tbsp
Pepper Powder - 1 tbsp
Garam Masala - 3/4 tsp
Egg - 1
Ginger Garlic Paste - 3/4 tbsp
Salt - as req.
Water - if req.


METHOD:

1. Mix the 'to marinate' ingredients very well to a thick paste. Marinate the cleaned chicken with it for atleast half an hour.


2. Deep fry the chicken in oil in HIGH flame for a few mins and remove immediately once the golden brown color is reached. Make sure not to brown too much. Remove and set aside.


3. Deep fry the curry leaves in the same oil for a minute. Remove and set aside.


4. Mix the curry leaves with the fried chicken. Sprinkle some lemon juice(optional) just before serving. DONE!!

Your simple, yummmy, mouthwatering fried chicken is ready to be served!!



NOTE:
----------------
1. You can skip egg. I used egg for taste and not for softening. 

2. Add or less ingredients as per your wish. Adjust masala as per your taste.

3. You can marinate for a few hours, or even for a day in the refrigerator. The more time you marinate, the more the masala will be absorbed by the chicken.

4. Always deep fry chicken in HIGH flame. If you fry in low or medium flame, the chicken will get harden, and you will feel difficult to chew. Believe me, my fried chicken is always very soft for chewing even after so many hours..Immediately remove the chicken from oil once the perfect color is reached, don't doubt if it is cooked inside or not, but definitely it will be cooked!!
