Veg Juices..I hav been following this method for my toddler till date since I find it the best way to make her eat these veggies..Though it can't be applied to all veggies, I m satisfied that it is good enough for a few veggies atleast..
Carrot and pumpkin are good sources of betacarotene, which is important for vision, and they have enormous amount of other nutrients as well. Beetroot, on the other hand is a vital source of iron and folic acid, and improves the haemoglobin as well. So, this is a much healthier juice for ur toddlers. For babies below 1 year, you can feed this as a puree as well, after consulting with your paed.
RECIPE:

Preparation Time: 5-7 mins
Cooking Time: <5 mins
Serves: 3/4 - 1 cup

INGREDIENTS: [1 cup=240 ml]
---------------------------------------------
Yellow Pumpkin - 1/4 cup
Beetroot - 1/4 cup
Carrot - 1/4 cup
Water - as req.
Honey(optional) - as req.
METHOD:

1. In a blender, add the 3 chopped veggies, little water, and blend well to a smooth puree. Strain the puree in a bowl, squeeze very well, and set the juice aside.
2. Again blend the strained pulp with little water, strain, squeeze, and add this to the kept aside juice.
3. Cook the juice for 3-5 minutes, or until boiled.
4. Allow to cool the juice at room temperature and then serve. Add honey only if required since the juice is already slightly sweet. DONE!!
Feed this yummy super healthy juice for ur toddler atleast thrice a week!!
NOTE:

1. You can feed this either as individual veg juices or as a mixed juice as illustrated.
2. You can add tomato and / or cucumber too if you wish.
3. Adjust the ingredients as per your taste.
