Kaara Chutney


Kaara Chutney is another must accompaniment for idli/dosa in South Indian restaurants..Spicy lovers lyk me will jus lov it..It's somewhat closer to the usual tomato chutney that we make, but the amount of spicy is what makes it different..

A few years back, when I went to Kodaikanal for vacation, I ate kaarachutney in almost all hotels, since it is a must there for idli/dosa unlike our native. I still couldnt forget the taste there. Such a fingerlicking taste. This rcp is not exactly like that, but tasty. I still wanted to make that chutney, and hope I will post it soon after a few trials. :)


RECIPE:

Preparation Time: 7 mins
Cooking Time: 7 mins
Serves: 3-4 persons

INGREDIENTS:      
------------------------------------------
Dried Red chilli - 4 or more
Shallots - 10
Tomato - 1.5
Garlic - 4 cloves
Chana Dal - 2 tbsp
Tamarind - a small ball size
Gingelly oil - for sauteing + tempering
Salt - as req.
Curry leaves - 1 sprig
Mustard seeds - 1 tbsp


METHOD:

1. In a kadai, pour some oil, add chana dal, red chilli, and saute till the dal gets light brown in color. Next add garlic and again saute a little.


2. Now put the shallots and stir fry them to golden in color. Next add the chopped tomatoes and saute until they become soft.


3. Add the tamarind now and mix for a minute. Switch off the stove and allow the mix to cool.


4. Blend the mix to a paste, transfer to a bowl, and add the necessary salt.


5. Now again pour some oil on the pan, temper with mustard and curry leaves, and pour this on to the bowl. Done!!


Your spicy, finger licking kaara chutney is ready to be served with idli and dosa!!


NOTE:
---------------
1. You can use any oil as you wish, but gingelly oil enhances the flavour.
2. Adjust ingredients as per your taste.
