Hi frnz..Today I m here with a delicious Mutton gravy, not made with the fleshy parts, but made with the head part!! Yes, it is Mutton Head Gravy..Usually we don't buy Mutton head in our home, very rarely..And after a very long tym bought it on last Sunday..So thought of making a recipe for the blog n channel..Really the head part has a peculiar taste than the usual fleshy ones..So, if u had never eaten it, try it next tym frnz..Now, let's see how to make the recipe..
RECIPE:

Preparation Time: 20 mins
Cooking Time: 30 mins
Serves: 6-7 persons

INGREDIENTS: [1 cup=240 ml]

Mutton Head - 1
Turmeric powder - 1/2 tsp
Salt - as req.
Ginger garlic paste - 1 tbsp
Water - as req.
For tempering:
Coconut oil - 2 tbsp
Shallots - 30(sliced)
Pandan leaves(Rambai) - 5
Curry leaves - 1 big sprig
Cloves - 4
Cardamom(crushed) - 4
Cinnamon stick - 4 small
Stone flower(kalpasi) - 1
Other gravy items:
Tomato - 2
Green chilli - 2
Potato - 2
Red chilli powder - 3 tsp
Coriander powder - 3.5 tsp
Saunf powder - 1 tsp
Garam masala - 1 tsp
Crushed pepper - 1.5 tsp
Coriander leaves - 1/2 handful
Mint leaves - 1/4 handful
To grind:
Grated Coconut - 1/2 handful
Whole cashews - 7
WATCH HOW TO MAKE THE RECIPE:
METHOD:

1. In a pressure cooker, cook the mutton head with turmeric powder, salt, ginger garlic paste, and 3 cups of water. Close the lid, and pressure cook for 11 whistles or as required based on the quality of the mutton. Open the lid, and transfer the mutton stock and pieces to 2 separate vessels.
2. Now, in the same cooker, pour the oil, and temper with the items mentioned in 'For tempering'. Saute until the shallots become translucent.
3. Next, add the slit green chilli, and chopped tomatoes one by one and saute well until the tomatoes turn mushy,
4. Add the remaining masala powders except garam masala. Saute a little and add half of the mutton stock, and add the chopped potato. Cook for 10 mins in low to medium flame.
5. Meanwhile, grind the grated coconut and cashews to a fine paste with little water. Keep it aside.
6. When the potato is almost cooked, add the remaining stock, and after a few mins, add the ground paste. Mix well. After 5 mins, add the garam masala, and when the gravy has reached the required consistency, finally add the coriander leaves and mint leaves. Switch off the stove, and close with the lid. Serve after 5 mins. That's it!!
