Brinjal Biriyani


Hi frnz..Today's recipe is a yummy n flavourful BRINJAL BIRIYANI..Really try this Biriyani atleast once n I m sure u will fall in love with it..This Biriyani is more or less like a pulao, n uses only minimal ingredients..It is a very good alternate for the usual Vegetable Biriyani which uses veggies lyk carrot, beans, potato etc..With a single veggie, u can make such a nice Biriyani..So, don't miss it n tell me ur feedback frnz..

RECIPE:

Preparation Time: 15 mins
Cooking Time: 30 mins
Serves: 5 to 6 persons

INGREDIENTS: [1 cup=240 ml]

Brinjal - 4 medium size (sliced)
Seeraka Samba rice - 1.5 cups
Onion - 1
Tomato - 2
Green chilli - 5 to 7
Ginger garlic paste - 1 tsp heaped
Coconut - 1/2
Turmeric powder - 1/2 tsp
Saunf powder - 1 tsp
Homemade Garam Masala - 2 tsp heaped ( Click here to know the recipe)
Lemon - 1/2
Coriander leaves - 1/2 handful
Mint leaves - 1/4 handful
Pandan leaves - 6
Ghee - 4 tsp
Coconut oil - 1 tsp

WATCH HOW TO MAKE THE RECIPE:

METHOD:

1. In a kadai, pour 2 tsp ghee, add chopped pandan leaves, sliced onion, and saute until the onion becomes translucent.
2. Next, add the slit green chilli and ginger garlic paste. Saute well until the raw smell goes.
3. Now, add the chopped tomatoes and saute until it becomes mushy. 
4. Meanwhile, extract the coconut milk from the coconut. I got 4.5 cups, and used 4.25 cups for the recipe.
5. Next, add the brinjal, turmeric powder, saunf powder, garam masala, and saute a little. 
6. Add the coconut milk, and cook in simmer for a minute. Add salt.
7. Close with a lid and cook in high flame until the brinjals are halfcooked. 
8. Simmer the stove, and add the squeezed lemon juice, coriander and mint leaves. Close with a lid.
9. After a few mins, when the liquid has almost reduced, and the rice is almost cooked, add 2 tsp ghee, and again cook for a few more mins.
10. Finally, switch off the stove, and serve hot after 10 mins. That's it!!

NOTE:
-----------
1. Cow milk can be used instead of coconut milk. But coconut milk is much better.
2. Any spices of any measurements of your taste can be used. But this measurement and choice of ingredients suits for people of all ages, especially kids.
3. Instead of pandan leaves, bay leaf too can be used.

4. I didnt soak the rice. If you are soaking it, then adjust the quantity of coconut milk accordingly.
