Hi frnz..I m here with a very simple Kootu this tym..Though I name it as Kootu, it doesn't use Dal in the recipe..I have had it many times in vegetarian hotels n Hindu wedding ceremonies..I have always been a banana leaf meal lover with lots of different side dishes with veggies..And this Kootu uses no other veggies at all, but only Tomato as the main ingredient..And I love it too..Had tried it before too but never posted in the blog n channel..So, now I m posting it..Come on let's make it..
RECIPE:

Preparation Time: 5 mins
Cooking Time: 10 mins
Serves: 4 persons

INGREDIENTS: [1 cup=240 ml]

Tomato - 5 to 6 (sliced)
Onion - 1/2 (fine chopped)
Mustard seeds - 1 tsp
Saunf - 1/2 tsp
Salt - as req.
Water - 1/2 cup
Coconut oil - 2 tbsp
To grind:
Grated Coconut - 1 handful or a little less
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Cumin seeds - 3/4 tsp
Garlic - 5 pods
WATCH HOW TO MAKE THE RECIPE:
METHOD:

1. In a kadai, pour oil, temper with mustard seeds, saunf, onion, and curry leaves. Saute until the onion becomes translucent.
2. Now, add the tomato and mix a little. Don't add water. Add salt and stir often to avoid burning.
3. In the meantime, grind the 'To grind' ingredients without water to an almost fine paste.
4. When the tomatoes are cooked, add the ground paste, and mix a little. Add the water, cook for a minute and then switch off the stove. That's it!!
Your tasty tomato kootu is ready to be served!! Njjoy!!
NOTE:

1. Use good quality desi tomatoes.
2. Don't overcook or mash the tomatoes.
3. Adjust the ingredients as per your taste.
