Hi all..Today I m here with a simple n delicious sweet, it's SNAKEGOURD BURFI..Burfi is a quick Indian sweet which u can make with minimal ingredients, yet favourite for many..I thought to make it with Snakegourd this tym, n it came out really well..Try this for sure n let me know ur feedback frnz..With no further delay, let's move on to the recipe..
RECIPE:

Preparation Time: 10 mins
Cooking Time: < 20 mins
Serves: 9 pieces

INGREDIENTS: [1 cup=240 ml]

Snakegourd - 1 medium size
Chopped coconut - 1 handful(see step2)
Jaggery - 1/2 cup or a little less
Crushed Cardamom - 2
Ghee - 3 to 4 tsp
Cashews(crushed) - 5 to 6
WATCH HOW TO MAKE THE RECIPE:
METHOD:

1. Peel and chop the snakegourd. Pulse it in a blender for 4-5 times. Don't grind it. Squeeze to remove the excess water, and transfer to a plate. (Don't waste the excess water. You can use it for other gravies.)
2. Pulse the chopped coconut in the blender for a few times, and take only 1 handful from this. If you are using grated coconut, skip this step, and use a handful of it.
3. In a pan, pour 3 tsp ghee, and add the snakegourd. Saute very well in simmer for 7 mins until the snakegourd is wellcooked and raw smell is gone.
4. Add the coconut and saute again for a couple of mins. Add a tsp of ghee to prevent burning.
5. Now, add the jaggery, and cook until it is melted, and well merged.
6. Add the cardamom and again cook for a few more mins.
7. Finally when the perfect consistency is reached, switch off the stove and transfer to a ghee greased plate.
8. When it is warm, make slice partitions, but don't cut them. Top with cashew powder. That's it!!
Your super tasty Snakegourd Burfi is ready to be served!! Njjoy!!
NOTE:
----------
1. If you want a green color Burfi, use sugar and food color. Skip jaggery.
2. Any nuts can be used for garnishing.
3. Jaggery can be replaced with palm sugar/brown sugar.
