Jackfruit Ragi Cake


Hi frnz..So today I m here with a different  n delicious healthy cake recipe..It's Jackfruit Ragi Cake..As the Jackfruit season is not yet over, I know many of ur houses will have the Jackfruit in stock..Jackfruit is my favourite fruit, n now my little one's too, who else doesn't like it? Of course I would always love to eat it as a fruit, but occasionally making recipes with it gives a different taste as well..And my little one has been asking for a cake since a few days, so I thought to bake this cake..Come on, let's see the recipe..



RECIPE:

Preparation Time: 10 mins
Cooking Time: 30+10 mins
Serves: one medium tin

INGREDIENTS: [1 cup=240 ml]

Jackfruit - 15+6 pieces
Ragi flour - 1 cup
Wheat flour - little less than 1/2 cup
Brown sugar - 1/4 cup
Baking soda - 1/2 tsp
Egg - 2
Vanilla essence - one small cap
Unsalted Butter - 4 tbsp

WATCH HOW TO MAKE THE RECIPE:


METHOD:

1. Grind 15 pieces of jackfruit in a blender to a fine paste. You can coarsely grind as well. Keep it aside.

2. In a bowl, add the egg, and vanilla essence. Melt the butter, and add to it. Beat very well.

3. In a vessel, add the ragi flour, wheat flour, brown sugar, and baking soda. Mix well. Add the egg mixture from the bowl to the vessel. Mix well slowly using cut-and-fold method. Don't over beat.

4. Fine chop the remaining 6 pieces of jackfruit, and add to the batter. Mix again.

5. Pour the batter to a cake tin. Place it in a stand in an aluminium idli pot, preheated already for 10 mins in high flame. You can also bake in a pressure cooker, click here to know that.

6. Now, bake in high flame for 2 mins, and in simmer for 28 mins. Next, open the lid, and insert a toothpick inside a cake to know if it is cooked. If it comes out clean, the cake is ready!! That's it!!

NOTE:
----------
1. Adjust brown sugar according to the sweetness of jackfruit. I used a very sweet variety, so 1/4 cup was perfect for me.

2. You can also use soft butter at room temperature without melting it.

3. When you are adding melted butter, make sure it is not hot. Else, the egg will get cooked.

4. You can also add dryfruits, nuts, tutti fruity etc. to the cake batter.

5. Cow milk or coconut milk can be added too a little to the batter. But it is optional.

6. Frosting or glazing too can be done on the cake, but not necessary.
