Hi frnz..Here it is a perfect Jam recipe to be served with Biriyani!! It's a common practice in our native Muslim weddings to serve Jam with Biriyani..Mostly Pineapple Jam is served, n sometimes this tomato jam too, n our homemakers usually go with tomato jam for Eid..And this TOMATO JAM was in my to do list for the blog n channel for a long time, n finally the right time came today..I m completely satisfied with the result, after hearing my little one say that it tasted exactly like the ones in Marriage ceremonies..Wat else do I want? RECIPE:

Preparation Time: 5 mins
Cooking Time: 40 mins
Serves: 5-6 persons

INGREDIENTS: [1cup=240 ml]

Ripen Tomato - 7
Brown Sugar - little less than 3/4 cup
Cardamom - 3 (crushed)
Cashews - a handful
Black raisins - a handful
Ghee - 2 tbsp
Water - as req.
WATCH HOW TO MAKE THE RECIPE:
METHOD:

1. Boil the tomatoes in some hot water in high flame for 10-12 mins with the lid closed.
2. After they have cooled a bit, peel them, and mash them well with your clean hands for 5-6 mins.
3. In a kadai, pour the ghee, roast well the cashews and raisins separately and transfer them to a plate.
4. Add the mashed tomato to the kadai and cook in simmer for 10-15 mins until it cooks well and thickened. Stir often in between.
5. Now add the brown sugar and again cook in simmer for 10-15 mins until a perfect color and thickness is reached.
6. Add the crushed cardamom and stir for a minute.
7. Finally, add the cashews and raisins and again stir for a few minutes until the Jam consistency is reached. That's it!!
Your super yummy n perfect Tomato Jam is ready to be served!! Njjoy!!
NOTE:
----------
1. Don't grind the tomatoes before or after boiling.
2. Mashing with clean hands is better than pressing with whisk or using blender.
3. Brown sugar can be replaced by jaggery. But jaggery dominates the taste. So, brown sugar is much better.
4. Don't close the Jam with a lid before it comes to room temperature.
5. It stays good in room temperature for a maximum of 2 days.You can also store it in refrigerator for up to a week.
6. Need not use vinegar or lemon juice just like other jams for long storage. This is usually made in halwa like process only.
