Hi frnz..Today I m here with a very very useful recipe for u..It's Instant Dosa!! And that too with puffed rice!! This is one of my innovative n exclusive recipes..This is the first time I m making it, n experimented with my own measurements with little fear n doubt..But it turned out so good n made me so happy tonight..Especially my kid, who is a die hard fan of regular Ghee Dosa, loved this Dosa too similarly n asked for more..Her comments made me to do this often hereafter..When u r running out of regular Dosa batter or when u have lots of puffed rice in hand, try this one for sure..Now, let's move on to the recipe..
RECIPE:

Preparation Time: 10 mins + min. 1 hr soaking time
Cooking Time: < 2 mins per Dosa
Serves: 9-10 dosas

INGREDIENTS: [1 cup=240 ml]
------------------------------------------------------------------
Puffed rice - 2 cups
Broken Wheat - 1/4 cup
Rice flour(Idiyappam flour) - 1 cup
Thick Curd - 200 gm
Boiled rice water - 1/2 cup
Water - 1/4 cup( I used puffed rice soaked water)
Salt - as req.
Coconut oil - for greasing tawa
WATCH HOW TO MAKE THE RECIPE:
METHOD:

1. Soak puffed rice for minimum 1 hour. I soaked for 2.45 hrs. Now, drain the water(1/4 cup), and grind it in blender along with broken wheat. Keep the blender aside.
2. Now, to the drained water, add the rice flour, boiled rice water, and curd. Beat very well without lumps. Add this to the blender and grind again very well to get a smooth Dosa batter consistency.
3. Transfer the batter to a vessel, add salt, and keep it aside for 10 mins.
4. In an iron tawa, grease with oil, pour the batter and swirl carefully. Cook in simmer for a minute. When one side gets cooked, flip and cook the other side. Transfer to a plate. That's it!!
Your super soft n tasty Instant Puffed Rice(Pori) Dosa is ready to be served!! Njjoy!!
NOTE:
----------
1. The Dosa will be very soft. So, handle it carefully while swirling and flipping.
2. You can experiment with your own measurements too. But if you are doubtful, follow my measurements.
3. Just like the regular Dosa, you can try many variations like egg Dosa, veg Dosa etc with this recipe.
4. You can also use hot water to soak the puffed rice, which will do the work even faster. But, be careful if you use the hot water for grinding.
