Dryfruits Puli Inji


Hi frnz..So here I m with yet another Onam special recipe..It's DRYFRUITS PULI INJI..Puli Inji is a traditional recipe of Kerala made with Ginger n tamarind as the main ingredients..It is served like a pickle n is very sweet, sour, salty, spicy n very good for digestion..I have made a twist to the traditional recipe by adding dryfruits..The outcome was jus perfect n awesome..So let's see how to make it..



RECIPE:

Preparation Time: 15 mins
Cooking Time: 30 mins
Serves: 25 persons approx.

INGREDIENTS: [1 cup=240 ml]

Black raisins - 1/3 cup or 1/2 cup
Dried cranberries - 1/2 cup
Dried blueberries - 1/2 cup
Water - 1.5 cups + 1 cup
Coconut oil - 3 tbsp
Mustard seeds - 1 tsp
Curry leaves - 1 big sprig
Dried red chillies - 3
Ginger - little more than 1/2 cup (very finely chopped)
Garlic - 20 small pods (finely chopped)
Green chillies - 5 (finely chopped)
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Fenugreek powder - 1/2 tsp
Salt - as req.
Jaggery - 1/2 ball crushed
Vinegar - 1/8 cup

WATCH HOW TO MAKE THE RECIPE:



METHOD:
---------------
1. Soak the raisins n dried berries in 1.5 cups hot water until use.

2. In a pan, pour oil, temper with mustard seeds, curry leaves, and dried red chillies.

3. Add the ginger and saute in simmer for a few mins until the color is changed.

4. Add garlic and again saute for a while until the color is changed.

5. Add the green chillies, saute a little and switch off the stove.

6. Add the red chilli powder, turmeric powder, fenugreek powder and mix well.

7, Pour the soaked dry fruits along with the water. Mix and switch on the stove.

8. Add 1 cup of water, salt, and allow the mix to boil and cook in medium to high flame until the mixture is thickened almost.

9. Add the crushed jaggery and again cook until is perfectly melted.

10. When a perfect Semigravy like consistency is reached, switch off the stove. Add the vinegar and mix a little. Allow to cool for a few hours and serve. That's it!!

NOTE:
----------
1. You can use dryfruits in any proportion of your choice. I used black raisins 1/3 cup just because I had only that much in hand.

2. Once cooled, store in an air tight container in a refrigerator. This stays good for several weeks.

3. Instead of very finely chopped ginger, you can use grated ginger too. But don't use ground ginger.

4. If you are making in less quantity, and going to finish it within 2-3 days, no need of using vinegar.
