Bird's eye (Kanthari Milagai) Chilli Paste


Hi frnz..So here I m with a very spicy Chilli paste recipe..It's BIRD'S EYE CHILLI PASTE..Bird's eye is one of the best chilli varieties with lots of medicinal values..It is not easily available in our market just like the other chillies..Somehow got a cup of chillies n I thought to make some paste recipe with it so that we can use it for gravies..Since it is a seasonal variety, try this paste n store in ur refrigerator for longer use..Now, let's see how to make it..


RECIPE:

Preparation Time: 5 mins
Cooking Time: < 10 mins
Serves: approx. 1/2 cup

INGREDIENTS: [1 cup=250 ml]
-------------------------------------------
Bird's eye Chilli - 1 cup
Ginger - a small piece
Garlic - 3 pods
Salt - as req.
Vinegar - 4 tsp
Brown sugar -  2 tsp
Gingelly oil - 1.5 tsp + 1 tbsp
Hot Water - for soaking

WATCH HOW TO MAKE THE  RECIPE:


METHOD:

1. Soak the bird's eye Chilli in hot water for 3-5 mins after removing the stem. Drain it.

2. In a blender, add the ginger, garlic, 1/2 tsp  gingelly oil and grind well.

3. Add 3 tsp vinegar, 1 tsp gingelly oil, salt, and again grind well to a smooth paste. Transfer it to a pan.

4. Now, cook the paste in simmer for 2-3 mins until the color is slightly changed.

5. Next, add brown sugar and stir until it is melted well.

6. Add 1 more tsp of vinegar and stir well.

7. Finally, add 1 tbsp of gingelly oil and stir for 2-3 mins until the perfect consistency is reached. That's it!!

Your super spicy Bird's eye Chilli Paste is ready to be served!! Njjoy!!


NOTE:
----------
1. Store this in an airtight container in a refrigerator after it has come to room temperature.

2. I used white vinegar. You can also use Apple cider vinegar.

3. Gingelly oil can be replaced with olive oil.
