Mirchi Mutton Biriyani


Hi all..MIRCHI MUTTON BIRIYANI!! The name looks good right? This Biriyani is very spicy n hence I named it as such..The ingredients are a little different from the usual Mutton Biryani n that makes it special..Plus I made it in Dum method instead of cooker n it came out so perfect..Must try this n let me know ur feedback frnz..


RECIPE:

Preparation Time: 20 mins + marination time
Cooking Time: 30 mins
Serves: 6-7 persons

INGREDIENTS: [1 cup=250 ml]
----------------------------------------------------------
Onion - 2
Almonds - 1 handful sliced
Dried cranberries - 1/2 handful
Ghee - 2 tbsp
Coconut oil - 4 tbsp + for frying

For rice:
Basmati Rice - 1.75 cups
Pepper - 2 tsp
Cloves - 5
Crushed cardamom - 5
Cinnamon - 3
Stone flower - 1
Nutmeg - 1
Pandan leaves - 6
Salt - as req.
Water - 1.5 ltrs approx.
Lemon - 1
Coconut oil - 1 tsp

For marination:
Mutton - 1/2 kg
Turmeric powder - 1/2 tsp
Salt - as req.
Tomatoes - 2 medium
Garam masala - 2 tsp heaped (Click here for recipe)
Homemade Bird's eye Chilli paste - 2 tbsp (Click here for recipe)
Coriander leaves - 1 handful
Mint leaves - 1/2 handful
Coriander powder - 1 tsp heaped
Curd - 1/2 cup
Ginger garlic paste - 2 tbsp

WATCH HOW TO MAKE THE RECIPE:


METHOD:

1. Fry the onions in coconut oil. Transfer to a plate.

2. Marinate the mutton with half of the fried onions and the 'For marination' ingredients for atleast 30 mins.

3. Meanwhile roast the almonds and the dried cranberries in ghee. Transfer them to a plate.

4. In a pressure cooker, pour 4 tbsp oil and add the marinated ingredients. Pressure cook for 10-11 whistles.

5. After the pressure is released, open the cooker, mix and remove the excess gravy if any. Else, cook until the gravy is reduced to a semigravy consistency.

6. Meanwhile, boil the water and add the 'For rice' ingredients except rice, lemon and oil. When the flavours of the spices are completely dissolved in the water, remove them. Add the rice already soaked for 10 mins, lemon juice and oil, and boil in high flame for 5-6 mins. Strain in a vessel.

7. Now, place a Dosa tawa in simmer, keep the pressure cooker on top. Spread the rice above the gravy, then the remaining fried onions, roasted almonds and berries, and finally the ghee used for roasting. Close with the lid and place a weight over. Cook in simmer for 15-20 mins. Open and mix slightly until the Masala, meat, and rice are well merged. Serve hot!! That's it!'

NOTE:
----------
1. You can try the same recipe with any meat.

2. Any spicy paste or sauce can be used instead of bird's eye chilli paste.

3. Any dryfruits and nuts of your choice can be used.
