Hi frnz..So today I have come with a breakfast combo of 2 easy n simple recipes..It's AVAL MASALA KANJI with DRUMSTICK LEAVES THOVAIYAL..This combo is really healthy n u can make them separately too with other combinations..Drumstick leaves is one of my favourites except that it takes time to peel off 😂😂..But the taste it gives to any dish is so yummm..If u wanna observe the real taste of it, then Thovaiyal is the best choice..And the Aval Masala Kanji, u need no rice or dal to make this simple kanji..An easy peasy one..So try both for sure frnz..
RECIPE:

Preparation Time: 10 + 30 mins
Cooking Time: 20 + 10 mins
Serves: 5 + 5 persons

INGREDIENTS: [1 cup=240 ml]
---------------------------------------------
KANJI:
Poha - 1.75 to 2 cups
Coconut oil - 4 tbsp
Curry leaves - 1 big sprig
Pandan leaves - 4 chopped
Cloves - 4
Onion - 1
Bajji Chilli - 2 fine chopped
Ginger garlic paste - 1 tbsp
Tomato - 1 big chopped
Water - 5 cups
Salt - as req.
Coriander leaves - 1/2 handful
To grind:
Coconut - 1/2 chopped or grated
Cardamom - 2
Cinnamon - 2
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Saunf powder - little less than 1 tsp
Coriander powder - 1 tsp
Shallots - 6
Water - little
THOVAIYAL:
Drumstick leaves - 2 cups
Green chillies - 2 or as req.
Tomato - 1 big
Salt - as req.
Water - very little
Coconut oil - 3 tbsp
WATCH HOW TO MAKE THE RECIPE:
METHOD:

KANJI:
1. In a kadai, pour oil, temper with curry leaves, pandan leaves, and cloves.
2. Add onion and saute until translucent.
3. Add chilli and ginger garlic paste and saute very well in between.
4. Now add the tomato pieces and saute until they become mushy.
5. Meanwhile grind the 'To grind' ingredients to a medium thickness paste. Keep it aside.
6.Sprinkle some water on the poha to make it soft.
7. When the tomato is wellcooked, pour water, add salt, and when it starts to boil, add the ground paste and cook in simmer for a few minutes. Adjust salt if necessary.
8. When the mixture is heated, add the poha and cook again for a few minutes.
9. Add the coriander leaves and switch off the stove. Serve after some time. That's it!!
THOVAIYAL:
1. In a pan, pour oil, add the drumstick leaves and saute for 5-6 mins.
2. Add the fine chopped green chillies and saute a little.
3. Add the tomato and saute until it becomes mushy. Switch off the stove and allow to cool.
4. Transfer the mixture to a blender, add salt, and grind well adding water little by little in between.
5. When the perfect Thovaiyal consistency is reached, transfer to a bowl. That's it!!
Your super healthy breakfast is ready to be served!! Njjoy!!
NOTE:
----------
1. You can add Poha as per the thickness you need. You can also add it directly to the kanji without soaking, or else you can add while serving too.
2. Adjust spiciness as required.
3. Any veggies of your choice can be added. For eg, carrot, beetroot, cabbage, beans etc. Cooked meat too can be added.
