Beetroot Jaggery Adai..This is nothing but a simple steamed rice flour and jaggery adai, with the goodness of beetroot added to it, and of course with little additional ingredients like, dryfruit powder, milk etc..Beetroot is a must to be included veggie in our kid's diet..But who likes its peculiar smell? Especially most of the kids never like it..I will say this is an awesome way to feed beetroot to ur kids, next to my Pumpkin Beet Carrot Juice recipe..See also my Carrot Beet Egg Poriyal recipe, which is yet another yummy recipe..And this Adai recipe is a very good option for kids snack box..I made this long back but only now I m posting it..I packed this to my kid's snack box when I made it, n she finished it off making me happy :)..So, must try this mommies..Now, let's move on to the recipe..

Serves: 6 persons

INGREDIENTS: [1 cup=250 ml]

Beetroot - 1
Milk - 1 cup
Idiyappam Rice flour - 1.5 cups
Wheat flour - 1/2 cup
Crushed jaggery - 2 1/4 cups
Homemade Nuts Powder - 1.5 tbsp
Cardamom crushed - 1 tsp
Water - as req.
Ghee - for greasing hands

1. In a blender, add the chopped beetroot and pulse for 2-3 times without water. Or else, grate it. Next, add this to the milk in a vessel, and cook in simmer until the beetroot is wellcooked and the milk is completely dried.
2. Now, in a pan, dry roast the wheat flour and rice flour separately in simmer for 5 mins or until a nice aroma comes.

3. In a plate, put both the flours, homemade nuts powder, crushed cardamom, and mix well.
4. Now, in a vessel, add the jaggery with water till it is immersed, and boil until the jaggery is completely dissolved. Strain to remove impurities, and boil again.
5. Next, add the flour mixture little by little to the boiling jaggery, and keep on stirring. And add the cooked beetroot too finally and mix very well. Switch off the stove. Now the mix is ready.
6. When the mix is warm, apply ghee to your hands, take a small portion, and flatten it into Adai shapes with your hands. Place it in an Idiyappam plate greased with ghee, make a couple of Adai in a similar fashion, and place the plate in an Idli Pot. Now steam cook for 10 mins. That's it!!
Your healthy n delicious Beetroot Jaggery Adai is ready to be served!! Njjoy!!
NOTE:
----------
1. For elders, you can also add little camphor and milkpowder to the dough.
2. For grownup kids and elders, you can also use chopped nuts instead of homemade nuts powder.
