Hi Frnz..So, with the blessings from the Almighty, the fasting during the Holy month of Ramadan for this year has started successfully, Alhamdulillah 😊..So, like last year, this year too I hav planned to post a few recipes which r very useful for Iftar n Dinner during this month..The first Rcp in this series is, a delicious n cooling icecream to be served as a dessert after dinner, n u can even make this on Eid..Since it is summer now, this is an apt recipe for the season..The special thing about the rcp is, fresh homemade paneer is used, which gives extra creaminess..With no further delay, lets move on to the recipe..

Serves: 5 persons

INGREDIENTS: [1 cup=250 ml]

Kamala Orange - 1 big + 1 small
Milk - 500 ml
Lemon - 1(small size)
Fresh cream - 120 ml
Thick curd - 100 gm
Powdered Sugar - 3/4 cup
Vanilla essence - 1/4 tsp
Crushed almonds(optional) - for garnish
METHOD:

1. Boil the milk very well. Add the squeezed lemon juice and the milk starts to curdle immediately. After a few seconds, switch off the stove, and pour the curdled milk over a cotton cloth placed above a strainer. Wash the paneer in tap water and squeeze the cloth well. Do this 2-3 times to remove the sour taste, and your fresh paneer is ready.

2. In a juicer, place the big orange and blend without water to get the extracted juice. If you are using blender, just blend the oranges for a few seconds without water and squeeze well.
3. Now in a blender, add the fresh cream, thick curd, paneer, and grind well. Add the orange juice, powdered sugar and grind very well to get a very smooth puree. Pour this to a vessel.

4. Add the vanilla essence to the vessel. Take the small sized orange now, peel the outer and inner skin, and remove the seeds to get the pulp and slightly mash it. Now add this too to the vessel, and mix everything well.
5. Pour the mix to a container and freeze for 6-12 hrs. Finally scoop in a bowl and garnish with crushed almonds. That's it!!
Your delicious n cooling Orange-Paneer Icecream is ready to be served!! Njjoy!!
NOTE:

1. If you have orange essence, use it instead of vanilla essence.
2. You can also use other varieties of orange.
3. If needed, use more orange pulp at step 4.
4. I have used storebought curd here. If you are using homemade curd, make sure it is not watery.
