Mixed Fruit - Bread Lasagna


Hi frnz..So, today our recipe is going to be a simple baked Bread Lasagna with the goodness of added fresh fruits..U might be very well familiar with Lasagna, a popular Italian recipe..It needs Lasagna sheets, but to make the recipe very simple, I hav used bread pieces, n so ur work is minimized to jus cutting fruits, toasting bread, n assembling it..U can also call this dish as bread cake or watever..But the taste is soo good n irresistible, n a perfect recipe to be served for guests..Now, let's move on to the recipe..

RECIPE:

Preparation Time: 30 mins
Cooking Time: 40 mins
Serves: 5 persons

INGREDIENTS: [1 cup=250 ml]

Wheat Bread - 5 to 6 slices + for making crumbs
Apple, Mango, Orange - 1 each
Sugar - 1/4 + 1/8 cup
Salt - a pinch
Unsalted butter - for greasing
Cinnamon powder - 1/2 tsp
Crushed almonds - for topping 


METHOD:

1. In a juicer, add the orange pieces, 1/4 water and grind well to get the extracted strained juice. Grate the orange rind and keep this aside.


2. In a blender, add a few slices of bread and powder it to get 1 cup of bread crumbs.


3. In a tawa, add butter, and when it is melted, add the bread slices which are torn into pieces. Toast both sides slightly.


4. Now, take a bowl, add the fine chopped apple and mango, 1/2 cup bread crumbs, 1/4 cup sugar, grated orange rind, orange juice, and mix everything well.


5. In another bowl, add the remaining 1/2 cup bread crumbs, 1/8 cup sugar, cinnamon powder, salt, and mix well.


6. Assembling: In a greased baking tin, arrange the toasted bread pieces closely without any gap. Next, spread half of the fruit mixture as the 2nd layer. Arrange the remaining bread pieces closely to make the 3rd layer. Spread the remaining fruit mixture as the 4th layer. Now, spread the bread crumbs mixture as the 5th layer, and press slightly with the bottom of a cup. Finally, garnish with crushed almonds.


7. Now, bake in a preheated pressure cooker for 30 to 40 mins(See how to bake in a pressure cooker).


8. After the baked Lasagna comes to the room temperature, refrigerate for sometime if required. While serving, invert it over a plate, again invert it over another plate, cut into pieces and serve. That's it!!

NOTE:
----------
1. You can add brown sugar or jaggery instead of sugar.
2. You can also add lemon juice instead of orange juice, and lemon rind instead of orange rind.
3. Desired fruits can be used.
