Hi frnz..Today I m here with a different delicious recipe..It's Jackfruit Seed Urundai Kuzhambu..U might be familiar with Paruppu Urundai Kuzhambu ryt? This recipe is made in a similar fashion with little differences..The idea rose in my mind after having a tasty jackfruit n seeing the seeds as leftovers..Jackfruit seed is a fantastic ingredient with which u can make plenty of recipes..In our town, the fry and drumstick curry recipes with jackfruit are quite popular..Hoping to share them too one day..With no more delay, let's move into the recipe..
RECIPE:

Serves: 5 persons

INGREDIENTS: [1 cup=240 ml]

For balls:
Jackfruit seeds - 30
Red chilli powder - 1 tsp
Cumin powder - 1 tsp
Turmeric powder - 1/2 tsp
Salt - as req.
Water - 1/4 cup
Onion - 1(fine chopped)
Coriander leaves - 1/4 cup(fine chopped)
For gravy:
Shallots - 30 to 40(sliced)
Pandan leaves(rambai) - 4(chopped)
Curry leaves - 1 big sprig
Cardamom- 3
Cloves - 3
Cinnamon stick - 2 pieces
Stone flower(kalpasi) - 1
Tomato - 1(puréed)
Green chilli - 4 small size
Ginger garlic paste - 1 tsp
Ginger garlic paste - 1 tsp
Garam masala - 1 tsp
Coriander leaves - 1/4 cup
Salt - as req.
Water - as req.
Coconut oil - 3 ladles
For gravy masala:
Grated Coconut - 1 handful
Red chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Saunf powder - 1 tsp
Coriander powder - 2 tsp heaped
WATCH HOW TO MAKE THE RECIPE:

1. Pressure cook the jackfruit seeds with water immersed for 20 whistles. Peel the outer white skin, and grind in blender without water to a coarse paste. Add the red chilli powder, cumin powder, turmeric powder, and salt, and grind again. Now, add the 1/4 cup water little by little to get a dough perfect for making balls. Add the onion and coriander leaves. Mix very well, make balls. Leave it aside.
2. In a wide vessel, pour oil, temper with curry leaves, pandan leaves, shallots, cardamom, cloves, cinnamon, stone flower, and saute until the onion becomes translucent.
3. Meanwhile, make the gravy masala with the 'For gravy masala' ingredients and little water in a blender to a little coarse paste.
4. Now, in the vessel, add the green chilli, tomato puree, and saute till the raw smell goes off. Next, add 2 cups of water. Allow it to boil and add salt.
5. After a minute, add the ground gravy masala and cook for a few mins. Add one more cup of water, and when the gravy boils, add the garam masala.
6. Now, carefully drop the balls in the gravy with little distance between each of them. Close the lid, and cook for 5-10 mins in simmer.
7. Finally, add the coriander leaves. Switch off the stove and close with a lid. Serve after 5 mins. That's it!!

NOTE:

1.You can also wash the jackfruit seeds and sun dry it for 2-3 days. This will help to remove the outer skin easily by just crushing it with hands.
2.The masala for gravy as well as the ground paste is purely based on our choice. You can change it as per your wish.

3. You can also add little tamarind water, and also temper with cumin, hing etc., which will also give a different taste to the gravy. The choice is yours. I made it more like a nonveg kurma/gravy which can even pair with tiffins.
4. You can also fry the balls, or steam for 5 mins. But making in the way I shown will give you a melt-in-the-mouth consistency.
