Creamy Country Chicken Biriyani


Hi frnz..Today's recipe is a Biriyani Challenge Recipe..It's Yummilicious Creamy Country Chicken Biriyani..I thank ShamlasFoodBushels YouTube channel for giving me this opportunity..She's a great cook..Her recipes r very tempting n  make us hungry, especially nonveg..So don't miss them frnz..Do support her channel..After completing mine, I have also challenged 3 other channels Karuna Pooja, The Soul of Cooking, and Arsh Paradish..They r excellent cooks as well..Do support them too..Now, let's move on to our recipe frnz..


RECIPE:

Preparation Time: 20 mins+ 1 hr marination time
Cooking Time: 40 mins
Serves: 4-5 persons

INGREDIENTS: [1 cup=240 ml]
--------------------------------------------------------------
Country chicken - 14 pieces(approx.500 gm)
Jeeraka Samba Rice - 1.5 cups
Onion - 1
Pandan leaves - 5(chopped)
Unsalted Butter - 3 tbsp
Salt - as req.
Water - as req.

To grind:
Green chilli - 4(big)
Whole pepper - 3 tsp
Nutmeg(jaathikkai) - a small piece
Stone flower(kalpaasi) - 1
Cinnamon stick - 2 pieces
Cloves - 5
Cardamom - 5
Ginger - 2 big pieces
Garlic - 20 pods

Other marination ingredients:
Turmeric powder - 1/2 tsp
Cumin powder - 1 tsp
Garam masala - 1 tsp
Salt - as req.
Curd - 100 ml
Cream cheese spread - 2 tsp
Coriander leaves - 1 handful
Mint leaves - 1/2 handful

For garnishing:
Onion - 2
Dried blueberry - 20
Black raisins(kishmish) - 20
Almonds - 20(sliced)
Cashews - 20(chopped)
Pineapple pieces - 1 cup

WATCH HOW TO MAKE THE RECIPE:


METHOD:

1. Grind the 'to grind' ingredients to a fine paste with little water. Along with this, add the 'Other marination ingredients' to the cleaned chicken. Set aside for minimum 1 hr.

2. Now, in a pressure cooker, pour 1 tbsp butter, roast the dried blueberry and raisins till they become bulgy and soft. Remove them. Next, roast the almonds and cashews. Remove them. Now, roast the pineapple pieces, and remove them.

3. To the same cooker, add 1 more tbsp butter, add 2 onions, and roast in medium to high flame till they are perfect brown in color. Transfer it to a plate.

4. Now, add 1 more tbsp butter, add the pandan leaves, and chopped onion. Saute until the onion is translucent.

5. Add the marinated chicken now and mix a little. Add 2 cups of water, and adjust the salt.

6. Next, add the cleaned rice, previously soaked for 10 mins. Mix, and close the lid. Cook for 2 whistles in medium flame. Switch off the stove. Finally, garnish with the dryfruits, nuts, and pineapple. That's it!!

NOTE:

1. I have used very young chicken, and hence I have cooked directly in the cooker, and it was perfectly cooked. If you are using older chicken, first cook the marinated chicken in cooker and then use it in the process at step5.

2. Instead of cream cheese spread, cream cheese/Paneer/cheese can be used.

3. I have used rice and water in the ratio 1:1.5, which means 2.25 cups of water for 1.5 cups rice. Since the marination already contains liquid, I have used 2 cups.

4. Adjust the ingredients as per your taste.
