Whole Ragi Ulundhan Kali

 

 


Hi makkalae..Today's recipe is an age old recipe, but with a little variation in it..WHOLE RAGI ULUNDHAN KALI..This can be served better for breakfast/lunch/brunch/snacks and when ever u feel like having it..

Ragi is a rich source of calcium n other vital nutrients..Ragi milk is one of the best alternatives for the over hyped cow milk..Of course cow milk is healthy, but it is not an essential must have item daily as we were taught..Plenty of plant recipes r there which have more calcium than cow milk, and ragi is one among them..

The best part about ragi is, it can be served as one of the first foods for a baby after 6 months, and even I used to serve it for my little one..In this recipe, I have added urad dal as well to make it even more healthier. Now, let's see how to do it..



RECIPE:

Preparation Time:  10 mins + 1 hr

Cooking Time:  20 mins

Serves: 12 balls approx.

INGREDIENTS: [1 cup=250 ml]

-----------------------------------------------------------

Whole ragi - 1 cup

Black urad dal flour - 1/4 cup (Click here for recipe)

Roasted Rock Salt - as required

Ghee - 6 to 7 tsp + for greasing

Water - as required


WATCH HOW TO MAKE THE RECIPE:   .


METHOD:

----------------

1. In a vessel, add ragi, wash twice and soak for an hour.

2. Drain the excess water. Now, grind the ragi to a smooth consistency with the required drained water adding it little by little.

3. In a bowl, along with the mixi washed water, add the black urad dal flour and mix well with hand to remove the lumps.

4. Now, in a wide vessel, pour the ground ragi, the urad dal flour mixture, approx. 1.5 cups water, and mix well.

5. Cook in simmer and keep on stirring.

6.Add salt after 5 mins and again stir continously. 

7. Cook until the mixture is thickened without lumps. 

8. Add ghee in regular intervals and stir very well. 

9. When the perfect consistency to make balls is reached, switch off the stove.

10. Apply ghee in your hands and mix the dough very well. Do this when the mix is slightly hot or warm.

11. Finally, touch water and roll the dough into balls. This step too has to be done when the mix is slight hot or warm. That's it!!

Your super healthy n yummy Whole Ragi Ulundhan Kali is ready!!  Njjoyy as it is or with some hottt chicken/mutton kuzhambuuuu!!



NOTE:

1.Gingelly oil too can be used instead of ghee but ghee tastes better.
