Fusion Corn Fried Rice


Hi frnz..So, after a week, here I m with a delicious Fusion Corn Fried Rice recipe made slightly different from the usual Chinese style fried rice versions..I have used no sauce, no egg, no vinegar in the recipe and have made it extremely simple but so tasty n perfect for the lunch box..



RECIPE:

Preparation Time: 10 mins
Cooking Time: 75 mins
Serves: 4-5 persons

INGREDIENTS: [1 cup=250 ml]

Corn - 1
Onion - 1
Garlic - 25 small pods
Capsicum - 1
Pepper powder - 1 tbsp
Salt
Mixed herbs - 2 tbsp (I used brown and salted)
Amla powder - 1 tsp
Coconut oil - 3 tbsp

For rice:
Basmati Rice - 1 cup
Salt - as req.
Coconut oil - 1 tsp
Water - 500 ml approx.
 
WATCH HOW TO MAKE THE RECIPE: 
 

METHOD:

1. Steam cook the corn in high flame for 50 mins to 1 hr. Allow to cool. Peel the corn using a spoon. Keep it aside.

2. Boil water in a vessel. Add salt. Add the rice already soaked for 10 mins. Cook in high flame for 9-10 mins. Strain and spread in a plate.
 
3. In a vessel, add the coconut oil, temper with the finely chopped garlic pods and saute for a few mins.

4. Add the finely chopped onion and saute a little. Need not become golden brown.
 
5. Next, add the finely chopped capsicum, and again saute for a few mins. Add the peeled corn and mix slightly.
 
6. Add little salt, pepper powder, amla powder, and 1 tbsp of mixed herbs. Mix slightly.
 
7. Add the cooked rice and toss very well until it is evenly mixed. 
 
8. Finally add 1 more tbsp of mixed herbs. Close and serve after 5 mins. That's it!!
 
Your super delicious Fusion Corn Fried Rice is ready to be served!! Njjoyy!!
 


NOTE:
----------
1. You can also peel the corn first and then steam or boil it. You can even use pressure cooker to save time.
 
2. For tossing, butter can be used instead of coconut oil.
 
3. You can also use green mixed herbs which is unsalty.
 
4. Amla powder can be replaced with Amchoor powder(Dry Mango Powder) or Chaat masala.
 
5. Spring onions can be used for garnishing. I skipped it due to unavailability.
 
6. The same recipe can be used with any veggies or meat, or simply plain.
 
7. Scrambled eggs can be added to the recipe.
