Wheat Rava Beef Nonbu Kanji (Iftar Porridge)


Hi frnz..And here I m with a must try recipe for Ramadan..Even though I have shared other porridge recipes in the blog, I have never shared a Nonbu Kanji(Iftar Porridge) recipe so far, especially not even a single one in my youtube channel..So, I wanted to present it this time..And of course lots of nonbu kanji recipes r there in the internet world, so I thought to gave some variations from my side..You need no rice to make the recipe, and no mutton too..Instead, I have used other alternatives..And when having the first sip of it during iftar, I was on cloud nine and we were very happy with the outcome..So, must try this n let me know ur feedback frnz..





RECIPE:

INGREDIENTS: [1 cup=240 ml]

Wheat rava/Broken wheat/Dalia/Samba Kodhumai Rava  - 1 cup
Moong Dal - 1/4 cup
Fenugreek Seeds - 2 tsp
Beef - 1 handful (finely chopped/minced)
Onion - 1 big
Tomato - 1 big 
Green chilli - 1 long size
Carrot - 2 (small sized, grated)
Ginger garlic paste - 2 tsp
Coconut - 1/2 ( 2 handful after grating)
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Coriander powder - 2 tsp 
Cumin powder - 1/2 tsp
Garam masala - 1/2 tsp
Cardamom - 2
Cloves - 2
Cinnamon stick - a small piece
Curry leaves - 1 sprig
Pandan leaves(rambai leaves) - 2 
Coriander leaves - a handful
Mint leaves - 1/3 handful
Salt - as req.
Coconut oil - 1 tbsp

WATCH HOW TO MAKE THE RECIPE:


METHOD:

1. In a big pressure cooker, add the wheat rava, moong dal, 1 tsp fenugreek seeds, half of the onion, half of the tomato, half of the green chilli, carrots, a handful of grated coconut, half of the coriander leaves, salt, and 3 cups of water. Close the lid, and cook for 2 whistles in simmer.

2. Meanwhile, in another small sized cooker, add the beef pieces, turmeric powder, salt, 1 tsp ginger garlic paste, 1/2 cup water, and cook in simmer for 17 whistles or until well cooked. 

3. Extract coconut milk from the remaining 1/2 handful of grated coconut. I got 1 cup first milk, 1 1/4 cup second milk, and 1 cup third milk.

4. Now, take a frying pan, pour the coconut oil, and temper with cardamom, cloves, cinnamon stick, 1 tsp fenugreek seeds, curry leaves, chopped pandan leaves, remaining onion and saute in low flame until the onion becomes translucent. Next, add the half green chilli and 1 tsp ginger garlic paste and saute until the raw smell goes off.

5. Add the remaining half tomato and saute until it becomes mushy. Next, add the red chilli powder, coriander powder, cumin powder, and garam masala, and saute a little without burning. Now, add the cooked beef mixture, and add the mint leaves, and the remaining coriander leaves. Mix very well. Transfer the pan to the other burner and keep on cooking in low flame. 

6. Now, to the big cooker, add 1 cup water, and the third milk. Keep on stirring in low flame. Add the tempering from the pan to the cooker. 

7. Next, add the second milk and keep on stirring in low flame. Add one more cup water and adjust the salt. When almost the required consistency is reached, add the first milk and cook in low flame for 2 mins or until the vapour comes off. That's it!!

Your yummilicious Perfect Nonbu Kanji with Wheat Rava and Beef is ready to be served!! Njjoyy!!


NOTE:
----------
1. You can replace beef with mutton, and wheat rava with raw rice/millets/seeraga samba rice/basmati rice.

2. 1 or 2 tsp of curd can be added to the masala while tempering in the pan, but this is optional and I skipped it.

3. You can also add a little ghee while tempering along with coconut oil, but this is optional. 

4. Use low flame throughout the process to prevent burning, as well as not to overcook the coconut milk.

5. You can also cook the beef mixture directly in the pan instead of using the small cooker, but it takes time. 

6.  If you want a vegetarian version of the kanji, just skip the beef, and add the turmeric powder and 1 tsp ginger garlic paste used directly to the pan while tempering.

7.  If you need a white kanji, skip the red chilli powder, turmeric powder, cumin powder, and coriander powder. Add 1 or 2 green chillies instead.

8. The ingredients and measurements I have given above is perfect and completely suits for kids as well as adults. Yet, you can adjust them as per your taste.
