Hariyali Country Chicken (Naatu Kozhi/Nadan Kozhi) Biriyani


Hi frnz.And after a long time, I m here with a Biriyani recipe..Yes, it's Eid special Hariyali Chicken Biriyani, and that too with yummy n healthy country chicken/naatu kozhi/nadan kozhi..We have stopped buying the broiler chicken, n switched over to country chicken a few years before..Same with eggs too..So, I have already tried country chicken Biriyani before, but this time I made somewhat different..

While searching for a new taste of Biriyani, found this Hariyali Biriyani recipe in Vahchef Sanjay Thumma's website..I like his recipes, especially the way he makes them n describes the taste, it's great to watch..And this one, the greenish color with some yellowish combo, I jus loved it..So, thought of trying this recipe, but I made some variations here n there to my convenience..And it was very yummy..If u r searching for an Eid Biriyani, definitely it's a must try..Let's move on to the recipe frnz..


RECIPE:

Preparation Time: 30 mins + min.3 hrs marination time
Cooking Time: 1 hr 30 mins
Serves: 5-6 persons

INGREDIENTS: [1 cup=240 ml]
-----------------------------------------------------------------------
Basmati rice - 1.5 cups
Country chicken - 14 pieces (approx. 350-400 gm)
Onion - 2
Tomato - 1 big
Turmeric powder - 1/2 tsp
Grated Coconut - 1/2 handful
Cardamom - 4
Cloves - 4
Cinnamon stick - 2 pieces
Pandan leaves(rambai leaves) - 4(chopped)
Ghee - 2 tbsp or as req.
Coconut oil - 1 tbsp + 2 tsp + for frying
Cashews, black raisins - 1 tbsp each or more

To grind:
Mint leaves - 1/2 handful
Coriander leaves - a little more than one handful
Green chillies - 5
Ginger - 1 big piece
Garlic - 5 small pods
Whole pepper - 2 tsp
Curd - little less than 1/2 cup
Salt - as req.

Other marination ingredients:
Cumin powder - 1 tsp
Turmeric powder - 1/2 tsp
Garam masala - 1 tsp 
Lemon - 1 (squeezed)

WATCH HOW TO MAKE THE RECIPE:



METHOD:

1. Grind the 'to grind' ingredients to a fine paste. Marinate this mix with chicken along with the 'other marination ingredients' for atleast 3 hrs in refrigerator.

2. Deep fry the sliced onion in coconut oil in high flame until golden brown. In the mean time, grind the coconut to a fine paste.

3. In a kadai, pour 1 tbsp ghee, and roast the cashews and black raisins. 
4. To the same kadai, add 1 tbsp oil, temper with cardamom, cloves, cinnamon and pandan leaves.

5. Next, add the tomato, mix a little, and add the marinated chicken pieces without the green mixture. Add little salt and water from the blender, and cook in low flame for atleast 30 mins until the chicken is well cooked.

6. Mix the coconut paste with the remaining ground green mixture. Keep it aside.

7. In a vessel, pour 2.75 cups of water, salt, and 2 tsp oil. When it boils, add the basmati rice, previously soaked for 30 mins. Cook in high flame for a minute and then in simmer until the water has reduced completely. In the meantime, dissolve the turmeric powder in little water. Remove the rice from flame.

8. For Dum: 
a) Heat an iron Dosa Tawa in simmer.
b) Now, place the chicken kadai on top of it.
c) Now spread the green mixture on top, then a layer of cooked rice, then a layer of green mixture, then a layer of fried onions, then a sprinkle of turmeric water.
d) Next, again add a layer of rice, then the green mixture, then the fried onions, roasted cashews and raisins, and turmeric water.
e) Finally add 1 tbsp or more ghee around the top layer.
f) Close with a lid, and place a weight on the top. Cook in simmer for 30 mins or until the perfect consistency is reached. That's it!!

Your super delicious Hariyali Biriyani with country chicken is ready to be served!! Njjoy with ur favourite sides!!


NOTE:
----------
1. While grinding, you can add a handful of palak leaves too to get even more bright color, and to be healthy. The original recipe contains it.

2. Country chicken can be replaced with broiler chicken/Mutton/beef/prawns etc.

3. Basmati rice can be replaced with Seeraga Samba rice.

4. Turmeric can be replaced with saffron. Instead of water, hot milk can be used for dissolving.

5. You can even pressure cook the country chicken to save time. But open cooking gives extra taste, so don't avoid it.

6. Adjust the ingredients as per your taste.
