Kodo Millet Vermicelli Upma with Country Vegetables


Kodo Millet Vermicelli Upma with Country Vegetables..So, this is our recipe today..I usually make different variations in upma recipe, but mostly won't add much veggies in it..With just another packet of Anil Vermicelli, got an idea of different taste upma, but not with the usual veggies like carrot, potato, beans, gobi, peas etc..I made a little more healthy twist with some leftover veggies..It's just my first try with country veggies in an upma recipe, n I must say it really worked very well..I served it for both breakfast n lunch for my little one, n she really loved it well..Do try this frnz..
 


RECIPE:

Preparation Time:  10 mins

Cooking Time:  20 mins

Serves:  3-4 persons approx.

INGREDIENTS: [1 cup=240 ml]

Anil Kodo Millet Vermicelli - 1 packet

Water - 1 litre

Salt - as req.

Coconut oil - 2 tbsp

Mustard seeds - 1 tsp

Curry leaves - 1 sprig

Shallots - 15, sliced

Green chilli -  1 big, fine chopped

Bottle gourd - fine chopped, 1 handful

Raw banana - 1, fine chopped & soaked in water

Vazhuthanangaa (Country Aubergine) - 1, fine chopped

Red chilli powder - 1 tsp

Turmeric powder - 1/2 tsp 

Cumin powder - 1/2 tsp

Coriander powder - 1/2 tsp

Moringa leaves powder - 2 tsp

Gooseberry powder - 1/2 tsp

METHOD:

1. As per the packing instructions, in a vessel, pour water, add salt,  and soak for just 2 mins. Drain it well, spread in a ghee-greased idli plate, keep aside for 5-10 mins and steam cook for 8 mins in medium flame. Remove and allow it to cool. Vermicelli is ready now. Use it for any recipe.

2. Now, in a vessel, pour oil, temper with mustard seeds and curry leaves.

3. Add the shallots, saute a little, followed by green chilli, veggies, and mix slightly. Close with a lid and simmer for 5 minutes stirring often until the veggies are slightly crunchy.

4. Next, add the red chilli powder, turmeric powder, cumin powder, coriander powder, salt, and mix well until the raw smell goes.

5. Add the moringa leaves powder, gooseberry powder, mix slightly and switch off the stove. Add the vermicelli and mix evenly and carefully. That's it!!

NOTE:

1. You can use any tempering and any veggies in the same recipe.

2. Any vermicelli and any rava can be used in the recipe.
