Aloo Moringa Masala



Hi all..Hope u r doing fine..We r indeed in a pathetic situation now due to the COVID-19..It has created a massive destruction so far killing thousands of people all over the world..Now it's time for us to be at home n thus breaking the chain of spreading..Well, that's very very important to be followed..It's also a big opportunity for us to increase our intake of immunity based foods at this time..So, take care all..Hope this situation will pass very soon..Now, we can see a veg dish with minimal ingredients but completely healthy since moringa leaves are used..It would be a good choice for u to make during this lockdown period..With no further delay, lets move on to the recipe..

RECIPE:

Preparation Time: 20 mins
Cooking Time: 20 mins
Serves: 3-4 persons

INGREDIENTS: [ 1 cup=200 ml]
------------------------------------------------
Potato - 2 ( small sized, finely chopped)
Moringa leaves - 1.5 cups
Gingelly oil - 1 tbsp
Ajwain (omam) - 1/2 tsp
Fenugreek (vendhayam) powder - 1/2 tsp
Shallots - 14 or as req. (sliced)
Red chilli powder - 1/2 to 3/4 tsp
Turmeric powder - 1/4 tsp
Cumin powder - 1/4 tsp
Pepper powder - 1/4 tsp
Salt - as req.
Water - as req.

WATCH HOW TO MAKE THE RECIPE:



METHOD:
---------------
1. In an earthen pot or kadai, pour 1 tbsp gingelly oil, temper with the ajwain and fenugreek powder. Add the shallots and saute until translucent.

2. Now, add the washed Moringa leaves and saute for a few minutes. Next, add the potato pieces and saute for a few more mins. Make sure not to burn.

3. Add salt, and little water and saute a little more.  Don't add too much water. Just sprinkling is enough to avoid burning.

4. When the potato and Moringa leaves are wellcooked, add the red chilli powder, turmeric powder, cumin powder, and pepper powder. Saute well often until the Masala consistency is reached. That's it!!

Your quick, tasty n healthy Aloo Moringa Masala is ready to be served with hot rice, roti etc!! Njjoy!!




NOTE:
-----------
1. Don't close the pot with a lid while cooking since it is not advisable to do it while cooking spinach varieties.

2. You can also pressure cook the potato and add, but make sure to add at step 4.

3. Instead of Moringa leaves, any spinach can be used.

4. I have used very less Masala as given above, since I felt adding more will spoil the taste of the spinach.
