I bought this from a vendor on the street, who sells fresh spinach varieties always..Thinking of a different recipe with the leaves, a simple Kathi roll came into my mind..The taste was so good, and a must try recipe as well..

Now let's move on to the recipe..

RECIPE:
--------------------------------------------
Preparation Time: 20 mins
Cooking Time: 15 mins
Serves: 2 Rolls
--------------------------------------------
INGREDIENTS:[1 cup=250 ml]
--------------------------------------------
For Rolls:
Wheat Flour - 1 cup
Salt - as req.
Water - as req.
Coconut Oil - as req.
Egg - 1
Toothpicks

For Filling:
Brahmi Leaves - 1.5 cups (approx.), washed and chopped
Onion - 1(fine chopped)
Cumin seeds - 1 tsp
Whole Pepper (crushed) - 1 tsp or less
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Salt - as req.
Water - as req.
Coconut Oil - 2 tsp or as req.

METHOD:
--------------
1. In a bowl, add the wheat flour, salt, water little by little, and knead well to form a dough. Add little oil finally to prevent stickiness in your hands. Keep the soft dough aside for 15 mins.

2. Meanwhile, to prepare the filling, add oil in a pan, and temper with cumin seeds. Add the onion, and saute well until it becomes transparent.

3. Next, add the brahmi leaves, and saute for 2 mins. Now, add the crushed pepper, chilli powder, turmeric powder, salt, little water, everything one by one, and saute well.

4. Now, take 2 balls from the dough, and roll them into thin chapatis. In a bowl, beat the egg with salt, and keep it aside.

5. Next, it's time to prepare the rolls. In an iron or nonstick pan, apply oil, place a chapati, and cook well in high flame flipping often.

6. When the chapati is almost cooked, simmer the flame, pour the egg mix, and spread evenly. Carefully flip after the egg is half cooked, and cook for a few more seconds.Transfer the chapati to a plate.

7. Keep the filling inside the chapati, and carefully roll over. Use the toothpick to join the ends. That's it!!

Your super delicious healthy Brahmi leaves Kathi Roll is ready to be served!! Njjoyy!!
