Caramelized Biscuit Pudding


Caramelized Biscuit Pudding..A variation of caramelized pudding, where I hav used some leftover biscuits too..I should say the taste was absolutely delicious to the core!! Puddings are gud options for those people with sweet tooth..We can eat them with less fear of getting tooth cavities, since these delicious varieties will jus melt into your mouth without any need to chew, at the same time fulfilling your sweet cravings..Especially the caramelised puddings are a favourite for almost everyone..The biscuits really add an extra taste to the pudding..

I hav trained my kid to eat the homemade food mostly, and I buy store bought biscuits very occasionally for her, like during travelling etc..She is not interested in them, which I am happy with, and takes 1 piece or sometimes only a few bites..So the remaining biscuits always stay unnoticed in the pantry, since there are no other Biscuit lovers in the home, including me..So, sometimes I try to make recipes with the leftover biscuits..This is one such easy and excellent recipe for any occasion or for after meal serving..Must try this frnz..

RECIPE:

Preparation Time: 10 mins
Soaking Time: 15-30 mins
Cooking Time: 10+45 mins

INGREDIENTS: [1 cup=240 ml]

Milk - 500 ml
Eggs - 4
Biscuits - 12
Sugar - 1/4 cup
For Caramelizing:
Sugar - 4 tbsp


METHOD:

1. Boil the milk, and soak the biscuits(I used Milk Bikis brand) in the hot milk for 15-30 mins( I soaked for 30 mins). After 30 mins, grind the milk+biscuit mixture in a blender carefully in batches, and pour the smooth mix to a vessel.


3. Now, grind the eggs and sugar into a smooth mix, and add this to the bowl, and mix well. Now the pudding mixture is ready.


4. For caramelization: In a steel vessel capable of holding the pudding mix, add the sugar, and keep on stirring continuously with a spoon in low flame until you get a brownish caramel color. It took 3-4 mins for me to get the caramel. Now, remove the vessel from the stove, swirl immediately to spread the caramel on the sides of the vessel, and allow the vessel to rest for 1-2 mins. The caramel will become firm now.

5. Now, pour the pudding mixture above the caramel in the steel vessel. Next, heat an idly pot with some water, place a separator inside, and when the water starts boiling, place the steel vessel carefully on the separator. Close the idly pot with the lid, and steam cook for 45 mins in low to medium flame.


6. Remove the vessel from the stove, and when the pudding comes to room temperature or slightly warm, loosen the edges of the pudding with a knife. Invert to a plate carefully. That's it!!

NOTE:
--------------
1. Be careful not to burn the caramel, and make sure to do it in low flame only.
2. You can also steam cook in multiple mini moulds. In such cases, prepare the caramel in a separate pan, and pour it immediately to the moulds, and follow the remaining steps of the recipe.
3. You can also cover the mould vessel with an aluminium foil to prevent steamed water from dropping into the pudding. But it's optional. Even if the steamed water is dropped into the pudding, it's not a problem at all.
4.I skipped vanilla essence, since the biscuits already contain vanilla flavour, and they are good enough to give a mild vanilla flavour for the pudding. To get an even more strong flavour, you can add a few drops of vanilla essence.
5. Any brand of biscuits can be used. In that case, adjust the sugar in the pudding mixture according to the sweetness of the biscuit.
6. You can also bake the pudding in an oven or pressure cooker.
