Strawberry Rava Idli..A sweeter version of rava idli made with strawberries!! The strawberry season was already over, but luckily found a single pack while shopping. So, I used it to make this kids special rcp. An year back, I tried the same rcp with mangoes, which I found from the internet. It was too good n I thought of making it with strawberries this time.
It was more than 2 weeks since I last posted. A bit busy at home for a week, and when everything got over n I had a few rcps in hand to post, the pc got into trouble, followed by the internet connection too the next day! Uffff . Finally somehow all problems got over, and I managed to post today.
I usually prefer whole fruits for my kid to get the complete nutrients. Only when she starts hating them to eat as whole, I start trying rcps with them for her. My Strawberry Sorbet rcp was her favorite. Yet another yummy rcp now.

Cooking Time: 15 mins
Serves: 6 no's(approx.)

INGREDIENTS: [1 cup=240 ml]

Strawberry Purée - 1/2 cup
Sooji - 1/2 cup
Curd - 1/2 cup
Shredded coconut - 1/2 cup
Sugar - 1/2 cup
Cardamom - 2 to 3
Ghee - 2 tsp + for greasing
Cashews(optional) - 6
METHOD:

1. In a blender, add the strawberry puree, shredded coconut, curd, sugar, and blend very well to a smooth batter. Transfer to a bowl, and set this aside.
2. In a pan, pour the ghee, add the sooji, and roast in simmer for 3-5 mins. Remove, and add this to the batter. Add the crushed/powdered cardamom to the batter, and mix very well with a whisk. Set this aside.
3. Grease the idli moulds with ghee, and place a cashews on each mould. Now pour the batter on the moulds, and steam cook for 10-15 mins. Remove from stove, and set this aside. Serve when idli comes to the room temperature. DONE!!
Yummy strawberry rava idli is ready to be served for your kids!!

NOTE:

1. Use thick and less sour curd for best results.
2. You can refrigerate the batter too for later use, but not more than 2-3 days.
