Barnyard Millet Soup..Barnyard Millet(Kuthiraivali/Jhangora/Odalu) is also a popular millet, which is gluten-free like other millets, and is known to be a good source of iron too as per studies. This
is the first time I am making soup with kuthiraivali millet, even though I have made some other dishes with it. The soup came out hot n very tasty.. I can hear your mind voice, "soup for this summer huh?" lol :)
But I need to finish off the millets in my storage since they will expire in a few weeks, n so u will be seeing a few millet recipes too coming soon frnz..The only thing I dislike about millets, they get expired soon unlike rice. So, we are forced to finish it off even if we are not in a mood to cook it. Otherwise, millets are simply great. Now moving on to the recipe..
RECIPE:

Soaking Time: 2 hrs
Preparation Time: 10 mins
Cooking Time: 20 mins
Serves: 5-6 persons

INGREDIENTS: [1 cup=240 ml]
--------------------------------------------
Barnyard Millet(soaked for 2 hrs) - 1/2 cup
Onion - 1
Tomato - 2(small)
Carrot - 2(small)
Orange - 4(small)
Ginger - a medium piece
Garlic - 5 cloves
Garam masala - 1/3 to 3/4 tsp
Pepper powder - 2 to 4 tbsp
Salt - as req.
Oil - 1 tbsp or as req.
Water - 4 cups
METHOD:

1. In a pan, pour oil, add the garlic cloves, saute a little, and add the sliced onions. Saute the onions till they become translucent.
2. Next add the fine chopped carrots, and grated ginger one by one and saute well in between.
3. Now add the garam masala, and tomato puree(just blended in a blender without water) one by one, and mix well. Pour the water and boil for a few mins.
4. Now add the soaked barnyard millet, and cook for a few mins. When they are cooked well, add the orange juice, pepper, and salt one by one. When a perfect soup consistency is reached, switch off the stove and serve hot!! DONE!!
Your yummy kuthiraivali soup is ready to be served! Njjoy!!
NOTE:

1. You can also use alternates like - butter instead of oil, lemon juice instead of orange juice, other millets instead of barnyard millet, any veggies instead of carrot etc.
2. To make orange juice, put oranges in a juicer with little water, blend, and extract the strained orange juice. You will get 1/3 cup.
3. You can also add some coriander leaves finally. But it is optional.
4. Kuthiraivali will make the soup thicken as time goes by. So, if you are serving it later, add hot water as required, and mix well to get a perfect consistency.
