MultimilletRava Mango Kesari


So, the Ramadan for this year has begun successfully, Alhamdulillah :)..Hope u ppl r spending ur precious times on special prayers, fasting, n of course cooking varieties of rcps for ur loved ones at home..You will be seeing a few special recipes in the blog coming soon, which will be really helpful for Ramadan frnz..I hav started the series with a sweet, particularly a healthy sweet, which u can serve after dinner, just like I did, on the first day of Ramadan :)

The taste was just fabulous, n it tasted almost like the sooji kesari..The measurements were perfect, which I did with some estimation, which brought out real surprise in me..Moreover, this is the first post with mangoes in the blog, which made it extra special..


RECIPE:

Preparation Time: 5 mins
Cooking Time: 20 mins
Serves: 15-20 pieces

INGREDIENTS: [1 cup=240 ml]

Multimillet Rava - 3/4 cup
Mango - 1.5
Sugar - 1 cup
Hot Water - 1 3/4 cup
Cardamom - 3
Cashews - 15
Ghee - 3 tbsp


METHOD:

1. First, chop the mangoes into small pieces, and mash it as much as you can with your clean hands. You will get 1 1/4 cup. A little bit of tiny chunks is ok, which gives an extra taste.


2. Next, in a nonstick pan, pour a tbsp of ghee, add cashews, and saute till golden brown. Remove and set them aside. Now, add the multimilletrava, and saute for a few minutes till a nice aroma comes from it. 


3. Now, add the hot water and mix very well without lumps(Or else, remove the rava to a plate, and add normal water, boil it, and then add the rava little by little and mix without lumps). Next, add the sugar to it, and keep on stirring. The mix becomes very watery after adding sugar.


4. After a few minutes, add the mashed mangoes and again keep on stirring continuously, adding the remaining ghee little by little in between.


5. Add the crushed cardamom and mix very well. 


6. Cook for 7-10 or minutes, or when the mix becomes thicken and starts leaving the sides of the pan, it's time to switch off the stove. Pour the mix on to a greased plate, and top with roasted cashews. As time goes on, you can see the kesari gets thickened. DONE!!


Your yummy multimillet rava mango kesari is ready to be served!!Njjoyy!!


NOTE:
-------------
1. Use mangoes with very less fibers. I used Sapota variety of mangoes.
2. Dont use blender to puree the mangoes. Mashing the mangoes enhances the taste to a higher level, and the fiber nutrients and sweetness of mangoes are also not lost.
3. You can also use milk/coconut milk instead of water to get a rich creamy taste. 
4. Serve at room temperature or chilled for better taste.
