Chettinad style Brinjal Thirakkal..Chettinad cuisine is famous for its plenty of unique spicy recipes. And this recipe is one among them..The method involves cooking of Brinjal along with potato in a spicy nuts paste..This goes well with kuzhipaniyaram, rava idli, dosai, idiyappam, chapati etc., and even with hot rice..

INGREDIENTS: [1 cup=240 ml]

Brinjal(small size) - 4
Potato - 2
Onion - 1
Cinnamon stick - 1 small piece
Pandan leaves - 3 pieces(or Biriyani leaves - 1)
Oil - as req.
Salt - as req.
Water - 3/4 cup or as req.
Water - 3/4 cup or as req.
To Grind:
Grated coconut - 1/4 cup
Tomato - 2
Red chilli powder - as req. from 2 tsp to 1 tbsp
Garlic - 5 cloves
Saunf - 1 tsp
Roasted gram(பொரிகடலை) - 3 tsp
Cashews - 15

1. In a pressure cooker, pour oil, and temper with cinnamon stick and pandan leaves. Next, add the fine chopped onion and saute very well.
2. Meanwhile, in a blender, grind the 'to grind' ingredients to a fine paste. Add this to the cooker and mix very well.
3. Now, add the fine chopped brinjal and potato, and mix very well. Add the required salt, 3/4 cup water, and pressure cook for 4 to 5 whistles. That's it!!
NOTE:

1. The Chettinad recipes are usually very spicy. However you can adjust the spiciness as per your taste.
2. You can also do open cooking instead of pressure cooking.
