Groundnut Stew


So, I m back to blogging after more than a month frnz 😊..Had a few recipes in hand already, but didn't post it..Finally, today I m here with a simple yet delicious veg gravy..GROUNDNUT STEW..This Vegetable Stew is very simple to make, n it doesn't need much ingredients..It is less spicy, however, we can adjust spiciness as per our taste..Also, we use groundnut here, not as whole, but the extracted milk from it, along with the coconut milk..Goes well with Idiyappam, Aapam, Rice roti n other tiffins too..Now, let's move on to the recipe..

RECIPE:

Preparation Time: 10 mins
Cooking Time: 20 mins
Serves: 3 Persons

INGREDIENTS: 
-------------------------------------
Fresh Groundnut - a handful
Grated coconut - 3 tsp
Potato - 1
Carrot - 1 or 2
Ghee - 1 tsp
Cardamom - 1
Clove - 1
Cinnamon stick - a small piece
Green chilli - 2 big or as req.
Salt - as req.
Water - as req.



METHOD:

1. In a pressure cooker, cook the potato with enough water for 10 whistles. When the pressure is released, peel and mash the potato very well.


2. Meanwhile, in another pan, cook the fine chopped carrot with enough water and salt until well cooked. Transfer it to a plate.


3. In a blender, grind together the coconut and groundnut very well with enough water, then extract and strain the milk. Repeat this step a couple of times and mix the 1st, 2nd, and 3rd milk together.


4. Now, in the pan, pour ghee, add cardamom, clove, cinnamon, and green chilli and saute a little.


5. Next, add the mashed potato, little water, and mix very well.


6. When the stew is thickened, add little more salt and water, the cooked carrot, and allow to boil.


7. Finally, add the extracted milk, and cook for 5 more mins. Switch off the stove when the desired consistency is reached. That's it!!


Your quick n tasty Groundnut Stew is ready to be served!! Njjoy!!


NOTE:
-------------
1. You can add any veggies as you wish like beans, cauliflower etc.
2. Add greenchilli as per your required spiciness.
