100th Post - Cheesy Mushroom Fry&Toast(2 in 1 Recipe)


Today is a special post for me! Can u guess why? Yay! It's my 100th blog post! 😃..I feel I hav achieved a little milestone today, and still a long long way to go 😊..But this moment is really an encouragement for me to post more and more useful recipes and reserve a little place for my blog in this blog world 😄..I should thank all of u frnz for ur encouragement, and keep on supporting me as always 🙂🙂..Well, coming on to the recipe, it is CHEESY MUSHROOM FRY, and CHEESY MUSHROOM TOAST..The first one is a perfect appetizer for parties, And the second one is actually made with the leftovers from the first one..Both r very simple to make n I m sure they will please ur tastebuds 😋..

Actually I thought to post a sweet recipe as my 100th post to celebrate the moment..But since I had this recipe in hand already, which is good enough to be posted as 100th one, I went ahead..I got the first recipe from a tv show..The 2nd one is actually not a recipe at all 😂..Since I didn't write out the measurements for the first one, I made some excess stuffing, and I had a couple of breads too as leftover after preparing Homemade Breadcrumbs for the dish..And jus before placing both of them in the refrigerator, I had a spark, y not to finish them now itself, and so I combined both of the leftovers and made another one and shot it as a video too..This is one such habit of mine to combine a few leftovers and create a new dish, and they taste great always actually 😁..Alright let's move on to the recipe..


RECIPE:

Preparation Time: 5+5 mins
Resting Time: 1 hr
Cooking Time: 5+5 mins
Serves: 3 persons

INGREDIENTS: [1 cup = 240 ml]
----------------------------------------------
CHEESY MUSHROOM FRY:

For Stuffing:
Grated cheddar cheese - 1 cup
Chilli powder - 1/2 tsp
Pepper powder - 1/4 tsp
Salt - little

For Batter:
Corn flour - 1/2 cup
Wheat flour - 1 to 2 tsp
Chilli powder - 1/2 tsp
Pepper powder - 1/4 tsp
Salt - as req.
Water - as req.

Other Ingredients:
Mushroom - 10
Toothpicks - 10
Bread crumbs - 1 cup or as req.
Oil - for frying

CHEESY MUSHROOM TOAST:

Mushroom stems(fine chopped)
Wheat Bread slices - 2
Leftover stuffing - 1/2 cup
Butter - 2 tsp

METHOD:

CHEESY MUSHROOM FRY:
1. Combine the ingredients under 'For stuffing' in a bowl, and keep it aside. Combine the ingredients under 'For Batter' in another bowl to form a slightly thick batter, and keep it aside.

2. Remove the stems of mushrooms. Place stuffing in all the mushrooms.

3. Now, take a pair of mushrooms, and place them facing their stuffing. Use toothpicks to connect them at both the edges. Similarly, repeat the process for the remaining 4 pairs of mushrooms.

4. Next, take a connected pair of mushrooms, dip in the batter, coat with breadcrumbs, and place it in a bowl. Do this for the remaining pairs too. Refrigerate the bowl for atleast an hour. This refrigeration helps to prevent the breadcrumbs coating from dissolving in oil while frying.

5. After an hour, drop the mushroom pairs in very hot oil, turn within a few seconds, and remove within a few seconds, and strain to remove the excess oil. This step has to be done very carefully. Because, if you fry even a little bit longer, the cheese stuffed inside will start to melt in the hot oil. So, the oil has to be more hot than we usually use for deep frying. That's it!!

CHEESY MUSHROOM TOAST:
1. Now, take the leftover stuffing which is around 1/2 cup, and fine chop the mushroom stems.

2. In a pan, add a tsp of butter, when it is melted, add the mushroom stems and saute well till the raw smell goes. Transfer it to a plate.

3. Again add a tsp of butter, place a wheat bread, and slightly toast on both sides. 

4. Next, place some stuffing on the top of the bread, then top with the roasted mushroom stems, then again place the stuffing. Close with a lid and cook for a few minutes. 

5. When the cheese is melted well, transfer the toast to a plate, and serve hot with tomato ketchup!! The entire process has to be in simmer to avoid burning. Thats it!!

NOTE:
-----------
1. You can use any stuffing along with cheese for the Mushroom Fry. Also the original recipe used maida instead of corn flour for the batter, but for a healthy version, I used corn flour and it worked great too.
2. Adjust spiciness of the batter and stuffing as per your taste.
3. Carefully add salt since the cheese already contains salt.
