Angaaya Podi(அங்காயப்பொடி)..An authentic, healthy recipe of Tamilnadu, where spices and herbs with great medicinal value are dryroasted, finely powdered and stored..There r a lot of Podi recipes in Tamilnadu cuisine like Paruppu Podi, Idli Podi, Curry leaves Podi etc etc..Angaaya Podi is one such recipe which is not much familiar to the current generation ppl..However, it is slowly getting popular again nowadays..This is a very helpful recipe for all of us and u will agree with it once u go through the ingredients..Sprinkle some Podi on hot rice, mix well and taste it, or jus hav it mixed with or without oil as a side for idli or dosa..It is very tasty as well..
I heard the name Angaaya Podi 4 or 5 yrs back for the first tym, in a tv cookery competition show..One of the contestants made it and got great appreciation from great chefs lyk Chef Dhamu Sir and Chef Venkatesh Bhatt Sir..After that I heard it several times at several instances..But this is the first tym I m trying this recipe..And I m happy to post this traditional Tamilnadu Recipe in my blog too..Don't worry that u can't get a few ingredients mentioned..They will be easily available in all NaattuMarunthu shops or even in supermarkets..And for ur easy reference, I have made it as a video..Do watch it, try it, and let me know ur feedback frnz 🙂..

INGREDIENTS:

Coriander seeds - 2 tsp
Pepper - 1/2 tsp
Cumin seeds - 1/2 tsp
Ajwain(ஓமம்) - 1/2 tsp
Chana Dal - 1/2 tsp
Mustard seeds - 1/4 tsp
Black sesame seeds - 1/2 tsp
Fenugreek seeds(methi/வெந்தயம்) - 1/4 tsp
Toor Dal - 1/2 tsp
Urad Dal - 1/2 tsp
Dried Red chilli - 3
Dried ginger(சுக்கு) - a small piece
Dill seeds(சதகுப்பை) - 1/2 tsp
Dried Neem flower(காய்ந்த வேப்பம்பூ) - 3 tsp
Dried Turkey Berry(சுண்டைக்காய் வற்றல்) - 7
Dried Sunberry(மணத்தக்காளி வற்றல்) - 8
Long Pepper(அரிசி திப்பிலி) - 1/4 tsp
Long Pepper Root(கண்டந்திப்பிலி) - 1/4 tsp after crushed
Curry leaves - 1 sprig
Salt - as req.
Asafoetida(Hing) - 1/2 tsp

METHOD:

1. Except salt and hing, dry roast all the ingredients one by one in low to medium flame till they are perfectly roasted and a nice aroma arises from them. Allow them to cool for a few mins.
2. In a blender, blend all those roasted ingredients to a coarse powder first. Add salt and hing, and again powder them very well. Store them in an airtight container. DONE!!

NOTE:

1. Be careful not to burn the ingredients while dry roasting. Adjust the flame accordingly.
2. It stays good for several weeks or even months when perfectly stored.
3. Always use a dry spoon while consuming it.
4. It tastes great for Idli and Dosa, and you can mix it with oil and serve or skip it. Both way tastes good. To serve with rice, just mix them with hot rice and sprinkle little ghee if needed.
