all..We are already nearing halfway in Ramadan 2022 n hope u all r enjoying the blessings of Ramadan..Today I m here with a simple dip recipe, which is EGGLESS PISTA MAYONNAISE..Mayonnaise is a favorite for almost everyone..It is very easy to prepare as well..Had some leftover pistachios in hand, n while thinking of what to proceed, came to a conclusion to make a mayonnaise, since it will be a nice companion with any starter, snacks, rolls etc, particularly in iftar time..Now., let's move on to the recipe..
RECIPE:

Preparation Time: 3 mins + soaking time
Cooking Time: Nil
Serves: 2-3 persons

INGREDIENTS: [1 cup=250 ml]
-----------------------------------------------------------
Pistachios - 36 to 40
Pepper - 1/2 tsp
Garlic - 4 small pods
Vinegar - 2 tsp
Mustard oil - 2 tsp
Roasted rock salt - as required
Water - 1/8 cup
WATCH HOW TO MAKE THE RECIPE: .
METHOD:

1. Soak the pistachios for at least 30 mins in the water.
2. In a blender, add the strained pistachios with pepper, garlic, vinegar, salt, and grind well. Reserve the soaked water for later use.
3. Add the oil and grind in high speed.
4. Pour the soaked water and again grind in high speed until the required smooth and stiff consistency is reached. That's it..
Your Eggless Pista Mayonnaise is ready!! Have it with ur favourite starter!!
NOTE:
----------
1.Any nuts can be added instead of pistachios.
2. Apple cider vinegar / Lemon juice can be added instead of vinegar, but vinegar gives the accurate taste for the recipe.
3. Mustard oil is very strong in taste, so it won't be liked by some of us. In that case, replace mustard oil with little mustard powder + coconut oil or any other oil.
4. You can skip oil, but adding oil will give the perfect texture and consistency.
