CoconutMilk Fruit Custard


Coconut Milk Fruit Custard..Simple Fruit Custard made with coconut milk this time..Custard is a favourite for almost anyone, and it is one of the simplest desserts made in no time..Usually it is made with milk, but coconut milk is something uncommon and came out soo good..The taste was awesome jus like the cowsmilk custard and u can hardly see any difference between the two..And most importantly, coconut milk is much healthier too, and so must try this frnz 😊..

BetterButter Tamil conducted a contest recently based on the topic, 'coconut based foods'..The recipe must use coconut as the main ingredient..Since they allowed our own already published blog posts too,  I submitted many of my blog recipes, and decided to submit a couple of new posts too..Coconutmilk Fruit Custard arose in my mind suddenly when I was thinking of innovative recipes..Then I recalled the Coconutmilk Custard powder Halwa recipe which I saw long back in someone's blog, which is almost similar to my Custard Powder Milk Halwa..So, I thought fruit custard with coconut milk too would really work well, and so made it and submitted..Not sure about the contest results, but happy to be a part of it for the first time..


Now, moving on to the recipe..

RECIPE:

Cooking Time: <10 mins
Serves: 4 persons

INGREDIENTS:

Coconut Milk(1st milk) - 220 ml
Coconut Milk(2nd milk) - 270 ml
Coconut Milk(3rd milk) - 20 ml
Vanilla Custard Powder - 2 tbsp
Sugar - 6.5 to 7 tbsp
Apple - 1
Pomegranate - 1
Banana - 1

METHOD:

1. Extract the coconut milk from 3/4 cup grated coconut and water 3 times, and keep the first, second, and third milk in separate vessels. In a bowl, mix the custard powder with 20 ml 3rd milk, and 20 ml of the 2nd milk very well without any lumps. Set this aside.


2. In a vessel, pour 250 ml of 2nd milk, and heat it in high flame for 1 minute.


3. Next, add in sugar and mix well. When the sugar is completely dissolved, keep the flame in low.


4. Now pour in the custard powder mix, and keep on stirring.


5. When the mix starts to get thick, add in the 1st milk and keep on stirring.


6. When the custard consistency is reached, switch off the stove, and allow the mix to come to room temperature. Refrigerate for sometime, and meanwhile, fine chop the fruits. Serve the custard chilled with chopped fruits..That's it..


Your delicious CoconutMilk Fruit Custard is ready to be served!! Njjoy!!


NOTE:
----------
1. While refrigerating, the custard separates the water from itself, because of the coconut milk used. So, mix very well before serving.
2. Use any fruits of your choice. Nuts can also be used.
