Coconut Milk - Rice Gruel(Thengapaal Kanji)


Coconut Milk - Rice Gruel(Thengapaal kanji)..A very simple porridge made in very less time with coconut milk, rice, n very less spices..No dal, no meat, no veggies, and it is very less spicy..This rcp is very helpful if you are running out of time and want to make a last minute kanji for iftar, to feed kids who refuse to have the usual masala ramadan kanji, or for bachelors who do self cooking and dont want to spend much time in making kanji etc etc..

Since I m living in my hometown, all homes including ours is loaded with masjid nonbu kanji, which is more than enough for a family, and all 30 days we get it. So no one makes kanji in homes. Thats the only reason I didnt post the traditional style nonbu kanji in this ramadan series rcps..But once ramadan gets over, I hope to post it soon, so that u can try the next tym frnz :)..


So, I thought of posting another easy porridge which I read somewhere, it was named as "nonbu vellai(white) kanji", but since I m unsure of its authenticity, I just named it as Coconut milk - rice gruel, based on the ingredients used..My little one just loved since it is completely spiciless, n she was asking more n more, which really surprised me..So, u can make this on the usual days too for ur kids or elders at home :).. 


RECIPE:

Preparation Time: 10 mins
Cooking Time: 10 mins
Serves: 2 persons

INGREDIENTS: [1 cup=240 ml]

Raw rice/Jeeraka Samba Rice - 1/2 cup
Coconut milk - 1/4 cup
Ghee - 1 tbsp or as req.
Curry leaves - a few
Rambai leaves(pandan) - 1 medium size
Ginger - 1/2 tsp(after crushing)
Garlic - 1/2 tsp(after crushing)
Fenugreek seeds - 1/2 tsp
Whole garlic - 3 cloves
Clove, cinnamon - 1 in each(not shown in the ingredients pic)
Salt - as req.
Water - 4.5 cups(approx.)


METHOD:

1. In a pressure cooker, add the cleaned rice, 1.5 cups water, whole garlic cloves, fenugreek seeds, and close the lid.  Pressure cook for 6 whistles. Open the lid after pressure releases, and you can see the well-cooked rice.


2. In a blender, add the hot rice, and 2/3 cups water and just pulse for a second, to get a slightly coarse paste.


3.  Now, keeping the flame at low, in a vessel, add the ghee and fenugreek seeds, curry leaves and rambai leaves, clove and cinnamon, ginger paste and garlic paste, all one by one, and saute very well in between.


 4. Now, add the rice paste, 2 cups water little by little, with salt added in between. Mix very well.


5. When the kanji becomes thick, add the coconut milk, and again cook for a few mins. When it starts boiling, switch off the stove. DONE!!

NOTE:
-----------
1. I used 1/2 cup coconut milk to make it more creamy for my kid. For adults, 1/4 cup is more than enough.
2. You can also roughly grind the rice before cooking, and then pressure cook, followed by the remaining steps.
3. You can adjust spices as per your taste.
4. If you have raw rice, prefer it. Else you can use jeeraka samba or any other thin rice.
